where is my "start" folder?

I installed wine on ubuntu and my "add/remove software" button went away. Synaptic package manager went away too. Where are the links to apps kept so I can try to restore them? I am finding Ubuntu rather opaque in ways that reminds me of Windows. Is this the case? I'm close to finding another distro..

I installed Ubuntu and Red Hat 9 on my vmserver. Needless to say I like Red Hat better since I had it for years as a partition in my hard drive. :)
