If you're not going to be using them again why not just remove them the way you would remove any other file?

once i created the new home directory on /dev/sdb1 and moved the files, should i unmount, remove the original /hone and then mount /dev/sbd1 /home?

Mary,

I am assuming the home directory is originally on the root partition so there is no reason to unmount. I believe that what is being asked is that you transfer your existing home directory to the new home directory on the partition you just created then you delete your old home directory; afterwards modifying your /etc/fstab to reflect that the new home directory is on the partition you created, lastly you can issue a partprobe at the command line to reflect the changes you have made.
